How to Make Palantine Snowballs

If you ever traveled to Germany you will know that the country is divided in different regions. Most of the time the dialect is so different from region to region that even some Germans are having problems understanding the meaning of some words. And just as it is with the dialects it also is with the food. Different regions, different food and different ways of fixing it. I want to tell you about a specialty from the region where I come from which is called Palatinate. There people like to eat hearty food. Nothing fancy but still delicious. One of the foods I want to introduce to you is the so called Snowballs.

This is what the people in Palatinate call one kind of Knoedel. (Loosely translated dumpling). It is called Snowball because it's consistency is like freshly fallen snow.

To prepare them you need:

12 to 15 potatoes

1 onion

some parsley

125 g butter

4 eggs

1 table spoon flour

salt and pepper

nutmeg and some marjoram

a little butter

2 table spoons bread crumbs

You boil the potatoes the day before and peel them. Than you need to mash all the potatoes.

The parsley and the real small cut onion are going to be smothered in butter for about 5 minutes.

Mix the onions and parsley under the mashed potatoes when done. Little by little you add the eggs and the flour. After everything is mixed up real good you start spicing it up with salt, pepper, nutmeg and marjoram. A pot with water goes on the stove. Bring it to a boil.

Now you need to wet your hands and start rolling medium size balls with the mash you just prepared. Drop each of them into the boiling water and let it cook for about 15 minutes. Make sure the water is not bubbling or the snowballs will fall apart. While they are cooking you take a little pan and melt the butter and brown the bread crumbs in it. After the 15 minutes you can take the snowballs out. Make sure they are completely drained. Put them in a nice bowl and pour the browned bread crumbs over the snowballs. Serve immediately. Best with roast or goulash and gravy and some red wine.

How to Make Vietnamese Caramelized Catfish - Ca Kho To


This is a classic southern Vietnamese "kho" dish. "Kho" is a type of dish that is braised in a thick, mildly sweet reddish-brown-colored sauce containing caramelized sugar and fish sauce. Catfish steaks are simmering in the sauce for an hour, absorbing a deep savory flavor tinged with sweetness.

For a great result, buy a whole fresh catfish at a local Vietnamese or Chinese grocery market, then ask the fishmonger to clean the fish and cut it into 3/4 inch slices for you. Use the center cut slices for this dish and the head, tail pieces you can use to make Fish stock. This dish is served over rice, for a best taste, combine a small piece of fish, some rice and a bit of sauce on each bite you eat.

Recipe for Vietnamese Caramelized Catfish - Ca Kho To:
Ingredients:
1 1/2 - 2 lb whole catfish
2 clove garlic, ground
3 shallots, diced
3 tbsp vegetable oil
1/3 cup sugar
1/4 tsp salt
2 tbsp Asian fish sauce
1 bird's eye chili, sliced
1/2 tsp cracked black pepper
2 scallion, sliced

Place the catfish flat on a board. Using a cleaver or large knife, remove the tail, fins, and head from the fish. Cut the fish from the tail into 3/4 inch sections.

Put the oil in a small saucepan over medium heat, add the garlic and shallots to the oil, and fry until garlic turns golden brown. Strain the oil through a fine metal sieve into a small clay pot, discarding the garlic and shallots.

Add the sugar and 1 tbsp of water to the clay pot over medium heat. Cook for about 5 mins to make a rich, dark caramel, then add the fish. Seal the fish on all sides in the caramel, then add the salt, fish sauce and 3 tbsp of water and bring to a boil. Decrease the heat slightly and continue to cook the fish for about 5 mins, or until cooked through. Garnish this dish with the scallion, chili and black pepper.

Serves 4

Make a note about which recipes you're going to use and where to find them. Pick up what you need at the supermarket, health food store, etc. And put the list of menus on your refrigerator so you can see it when you get home.

You've just saved a lot of time by thinking ahead, shopping, finding recipes, etc. And you and your family will love the meals that you've come up with.

Now, if you're not crazy about cooking, maybe it's time for an attitude adjustment. Did you know that it's actually harder to be a bad cook than to be a good cook? This is especially true if you are using quality ingredients.

Grilling The Perfect Steak - Steak Marinades and Steak Toppings


Here's my two cents on grilling the perfect steak: USE THIS MARINADE. This is a recipe for steak marinade that also made me famous: It is one of my best steak marinades.

BEST STEAK MARINADE
1/2 cup canola oil
1/3 cup lemon juice, freshly squeezed
1/3 cup soy sauce
1/4 cup worcestershire sauce
3 TBS fresh garlic, minced
3 TBS dried basil
1-1/2 TBS parsley, dried
1 TBS fresh ground black pepper
1/2 tsp hot pepper sauce, optional

Place the ingredients in a blender or food processor and blend on high for 30 seconds. Pour marinade over steak and refrigerate OVERNIGHT. Discard marinade the next day and grill the steaks. Perfection at it's finest.

MUSHROOM SPREAD

3 TBS butter
1 lb fresh mushrooms, sliced
1 small onion, chopped
1-1/2 TBS flour
1 cup sour cream
1/2 tsp garlic powder
1/2 tsp fresh lemon juice
sea salt to taste
freshly ground pepper to taste
1/3 cup parmesan cheese

Melt the butter in a skillet and add the mushrooms and onion; fry until tender. Sprinkle with flour, reduce heat to low and cook for 5 minutes. Now add the garlic powder, lemon juice and then season with salt and pepper. Place in a baking dish and top with parmesan cheese. Put in the refrigerator overnight for best flavor. When ready to serve, preheat oven to 375 degrees. Bake for 15 minutes or until hot and bubbly. Serve with crusty French bread or garlic pita chips.

STEAK BUTTER

1-1/2 sticks unsalted butter, softened
4 garlic cloves

Combine in a food processor or blender. Season with kosher salt and freshly ground black pepper to taste. Place on a hot grilled steak before serving. (My mouth is watering right now)

How to Make Meat/Poultry Gravy


Although it is fairly simple to make, many home cooks have a difficult time making flavorful, smooth gravy. With a little practice, you can turn out homemade gravies in as little as 10 minutes. It is the perfect touch to complete your dinner. Besides, who doesn't like gravy?

When you bake a roast, turkey or chicken, there should be juice in the bottom of the baking pan. Pan juice is the most important ingredient in meat/poultry-based gravy.

After you have removed your meat from the pan, pour the pan juice into a saucepan.

Here is what you will need-

· 2 tablespoons flour
· 1 cup cold water
· 1 to 1½ cups of meat juice from baking pan
· Salt and pepper to taste

Making the Gravy

Tip: When mixing the cold water and flour, use a shaker container to mix. Shake for at least 30 seconds to thoroughly mix. It is important that you use cold water. Hot water will cause the flour to lump.

Do not turn the heat under the pot just yet. I found if you mix the juice and the flour mixture first, then add the heat you are less likely to get lumps.

Add the flour mixture very slowly stirring continuously. Put saucepan on stove and use med heat. Bring to a boil then simmer for 2 minutes. This helps take away the raw flour taste.

Add salt and pepper.

Not so hard, right? Well here is a little tip I use myself.

Turkey Gravy
Using juice for making gravy is really simple, but what happens when you don't have the time to wait for the drippings?

Turkey is usually for a large dinner plan. To help cut down the last minute rush of trying to get everything ready to serve, you can use the neck and giblets (pieces in pouch) before hand to make the gravy.

All you need to do is simmer them in a saucepan of water for an hour, then strain the juice. You can do this ahead of time and let it cool. Then, follow the steps in the meat-broth recipe.

Traditional Southern White Gravy


If you love those Southern breakfasts why not learn to make the traditional country breakfast gravy that is used for biscuits, steaks, French fries and virtually everything else? Biscuits and gravy have been a staple in the diet of many individuals and families in the South. Some people call it Sawmill gravy, White gravy or simply Cream gravy.

True southern gravy is a pan gravy, usually made with grease, fat or lard.

Breakfast gravy gets its rich, creamy texture from whole milk, which replaces the water or broth in traditional meat-based gravy.

Here's what you will need:

· 4 tablespoons flour
· 5 tablespoons meat drippings (bacon grease, sausage grease or pan drippings)
· 2 cups whole milk (not skim or 2 percent)
· Salt and pepper

Put the meat drippings in a saucepan over low heat. Mix the flour gradually into the meat drippings. Cook until the flour mix is tan in color (this also gets rid of the raw taste of the flour), add the milk slowly. Make sure you constantly stir the mixture. Simmer the gravy stirring continually until it thickens to a creamy consistency. If it gets too thick, just add more milk a little at a time but be careful not to make it too thin.

Add salt and pepper to taste.

Tip 1: If you want richer gravy you can substitute the milk with light cream or half-and-half.

Tip 2: Freeze small amounts of the bacon grease, sausage grease or pan drippings for future use.
